Since car is moving in a round, the direction of its velocity vector changes continuously but its magnitude reamains constant. Since speed is the magnitude of velocity it won't change. Hence only velocity will change. Velocity is a vector quantity(quantity which has both magnitude as well direction) and speed is scalar quantity(quantity which only has magnitude). Hope this helps.
